We get a lot of questions about breakfast, and most of them are great. The most common theme is “I am egged out, what about something that I don’t have to crack and scramble???”
I know that eggs get old. Trust me, I’ve done them every day for about 8 years. There are two ways to spice up breakfast if you’re egged out. You can either start looking at new ways to eat your eggs, or find an alternative protein source.
To keep mine tasty, I rotate different veggies into the mix. Right now I’m on sauteed spinach. I was doing red peppers and onion for a while. Mushrooms aren’t bad either, and left over veggies from last nights squash or green beans or whatever ALWAYS taste good when you heat em up in your pan and dump some scrambled eggs on them.
I also throw a LOT of salsa on top. Jacks salsa is my favorite, but Publix brand medium salsa is number two (Jacks is available at Costco for a huge savings...Publix is $1.99 and has remarkably never changed in price in the three years that I’ve been buying it to put on everything). Besides salsa, hot sauce is a favorite...ever tried the green Tabasco sauce?
A fritatta is a nice way to make more than one breakfast at a time. If anyone is interested, post a comment with your recipe or one you want me to look into and I’ll test run it with pictures.
One of Todd’s favorites is eggs over easy with some sweet potatoes on the side and maybe a sausage link. He fats up with some delicious macadamia nuts. Check out the pics below and tell me that doesn’t hit the spot on a Sunday morning!
Sometimes you just don’t want to use the pan, or you’re in a hurry.
Then you’ve got hard boiled eggs. You can buy them pre-cooked and peeled (can’t get much easier or quicker than that), or you can do them yourself and just keep a bowl of them in the fridge all week for a quick protein stack between meals. Oh yeah, and Jason’s Deli has them on the salad bar and I am notorious for cleaning them out and leaving a yellow mound of yolks left over.
Of course, if you do dairy, you can always do cottage cheese in the morning. Greek or plain yogurt (the stuff without added sugar) go great with fresh fruit and maybe some nuts. You can also pre-mix the night before if you want to sleep in and eat on the run.
Another tasty trick I heard was two slices of deli meat wrapped around a cheese stick. Pair it up with an apple and a spoonful of almond butter and you’ve got a zone meal in the car...and you’ll be full, trust me.
